The thickest part of the thigh must reach 74 °C (165 °F). Cook to temperature rather than time, and rest the bird for 30 minutes before carving.

How long does it take to thaw a frozen turkey? +

In the fridge, allow about 24 hours per 4 lb (so a 16 lb bird needs ~4 days). In cold water it’s faster — about 30 minutes per pound — but you must change the water every 30 minutes and cook it straight away. Set the turkey to “Frozen” and the thaw time appears.
