What is the Dough Temperature Calculator (DDT)?
Professional bakers control dough temperature because it controls fermentation — the same recipe ferments faster when it’s warm and slower when it’s cold. This calculator uses the standard baker’s formula to tell you exactly what temperature your water should be to land on your desired dough temperature (DDT), accounting for your flour temperature, the room, and the heat your mixing method adds. Add a preferment and it switches to the four-factor formula automatically. It’s the missing piece that makes bread and pizza dough behave the same every time.

Frequently asked questions
What is desired dough temperature (DDT)? +
It’s the temperature you want your dough to be right after mixing — usually 24–26 °C (75–78 °F) for lean breads. Hitting it consistently makes fermentation times predictable.
How does the water temperature formula work? +
For a straight dough, water temp = (DDT × 3) − flour temp − room temp − friction factor. With a preferment it’s × 4, also subtracting the preferment’s temperature. This tool does the maths for you.
What is the friction factor? +
It’s the heat mixing adds to the dough. Hand kneading adds only a few degrees (~3 °C / 6 °F); a stand mixer can add about 14 °C (25 °F), so it needs much cooler water.
