Is Diamond Crystal the same as Morton kosher salt? +

No — and this is the most common salting mistake in American recipes. Morton kosher salt is denser: a cup weighs about 225 g against Diamond Crystal’s 135 g. Substituting one for the other by volume changes the seasoning by roughly two-thirds, so use about 40% less Morton than a Diamond Crystal measurement.

Why not just weigh the salt? +
